For The Piccalilli

  • Head broccoli                                                       ¼
  • Turmeric                                                              ½ tsp
  • Curry powder                                                      ½ tsp
  • Mustard seeds                                                     ½ tsp
  • Caster sugar                                                          25 g
  • White wine vinegar                                             1 tbsp
  • White wine                                                            100 ml
  • Water                                                                       50 ml
  • Sugar snap peas                                                     1 handful
  • Cornflour                                                                 2 tsp

For The Pork Pies

  • Lard                                                                          100 g
  • Water                                                                        100 ml
  • Plain flour                                                                280 g
  • Smoked bacon                                                         100 g
  • Pork shoulder steaks                                                50 g
  • Dried apricots, chopped                                        1 handful
  • Sprigs thyme, chopped                                                 2
  • Allspice                                                                        1 pinch
  • Chicken fillets, sliced to fit the pies 200 g
  • Oil                                                                                  1 glug
  • Egg, beaten                                                                      1
  • Gelatine leaf                                                                     1
  • Chicken stock                                                            250 ml
